Avocado and Mango Sushi Rolls

If you're craving sushi but want a lighter, plant-based alternative, these Avocado and Mango Sushi Rolls are a fantastic choice. The creamy avocado pairs beautifully with the sweet, juicy mango, creating a perfect balance of flavors. Whether you’re a sushi pro or a beginner, these rolls are surprisingly easy to make at home!
INGREDIENTS
  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 ripe avocado, sliced into thin strips
  • 1 ripe mango, peeled and sliced into thin strips
  • 4 sheets nori (seaweed)
  • Soy sauce for dipping
  • Pickled ginger (optional, for serving)
  • Wasabi (optional, for serving)
INSTRUCTIONS
  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a pot, and bring to a boil. Once it boils, lower the heat to a simmer and cover the pot. Cook for 15 minutes, then remove from heat and let it sit, covered, for 10 minutes.
  2. Season the Rice: In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice has finished resting, drizzle the vinegar mixture over it and gently stir to combine. Allow the rice to cool to room temperature.
  3. Prepare the Fillings: While the rice is cooling, slice the avocado and mango into long, thin strips. These will be your filling for the sushi rolls.
  4. Roll the Sushi: Lay a sheet of nori on a bamboo sushi mat, shiny side down. With wet fingers (to prevent sticking), spread a thin layer of rice across the nori, leaving about 1 inch at the top edge clear. Arrange a few strips of avocado and mango in the center of the rice.
  5. Roll It Up: Using the sushi mat, gently lift the edge closest to you and begin rolling it away from you, keeping the filling tightly in place. Use the exposed edge of the nori to seal the roll. Slice the roll into 6-8 pieces using a sharp knife.
  6. Serve: Serve your avocado and mango sushi rolls with soy sauce, pickled ginger, and a dollop of wasabi on the side.
If you prefer a slightly crispy texture, you can toast the nori sheets lightly over an open flame for a few seconds before using them.
